- 1 teaspoon vanilla extract
- 1 pre-made or homemade shortbread cookie crust
- 1/2 teaspoon almond extract (optional)
- 2 tablespoons lemon juice
- 1 tablespoon butter (for topping)
Instructions
- Line a baking pan with parchment paper and press the shortbread crust evenly into the bottom.
- In a bowl, mix cherries with sugar, flour, vanilla extract, lemon juice, and almond extract if using.
- Spread the cherry filling over the prepared crust evenly.
- Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until edges are golden and filling is bubbling.
- Remove from the oven and let cool completely before cutting into bars.
- Optionally, serve with powdered sugar or whipped cream for an extra touch.
Notes
- You can use fresh or thawed frozen cherries for the filling.
- Draining excess liquid from the cherries prevents soggy bars.
- For added flavor, stir in cherry liqueur or cinnamon into the filling.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezing individual bars preserves freshness for longer storage.
