Instructions
- Preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface to an even thickness. Cut into 1-inch wide strips.
- Mix the softened goat cheese with honey in a small bowl. Spread a thin layer over each pastry strip, leaving borders around the edges.
- Distribute fresh blackberries evenly over the goat cheese layer. Sprinkle with chopped fresh thyme or basil if using.
- Twist each strip from one end to the other, pinching the ends to secure the filling. Place on a parchment-lined baking sheet.
- Brush the twists with beaten egg and sprinkle with coarse sea salt. Bake for 15-20 minutes until golden and puffed.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
