- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 2 cups shredded cheese (cheddar, Monterey Jack)
- 4 large flour tortillas
- 1/4 cup chopped cilantro
- 1 sliced jalapeno (optional)
- 1 tablespoon olive oil
Instructions
- In a bowl, mix shredded chicken with BBQ sauce until evenly coated.
- Heat a skillet over medium heat and lightly brush with olive oil.
- Place one tortilla on the skillet, spread a quarter of the BBQ chicken mixture on half, sprinkle with cheese, cilantro, and jalapenos.
- Fold the tortilla over and cook for 2-3 minutes until golden brown and cheese melts.
- Flip and cook the other side for another 2 minutes. Repeat with remaining tortillas.
- Slice into wedges and serve hot.
Notes
- Use rotisserie chicken for quick prep.
- You can add sliced onions or bell peppers for extra flavor.
- Serve with sour cream or extra BBQ sauce.
