- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced

Instructions
- Preheat oven to 375°F (190°C).
- Brush salmon fillets with 1 tablespoon olive oil, season with salt and pepper.
- In a bowl, mix chopped spinach, feta, and minced garlic.
- Make a slit in each salmon fillet to create a pocket, stuff with the spinach and feta mixture.
- Place fillets on a baking sheet lined with parchment paper.
- Drizzle with remaining olive oil and top with lemon slices.
- Bake for 20-25 minutes until salmon is flaky and cooked through.
- Garnish with fresh herbs before serving.
Notes
- Ensure not to overstuff to prevent spilling during baking.
- You can substitute spinach with kale or arugula.
- Serve with a side of roasted vegetables or rice.
