  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 500g (1 lb) of your favorite pasta (penne, fettuccine, or spaghetti)
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Fresh basil, chopped (for garnish)
  • Optional: Red pepper flakes for a spicy kick

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 5-6 minutes per side until golden and cooked through. Let rest, then slice into strips.
  3. Add minced garlic to the same skillet and sauté until fragrant, about 1 minute. Add chopped sun-dried tomatoes and cook for 2 minutes. Pour in heavy cream, Parmesan, and Italian seasoning. Stir well and simmer for 3-5 minutes until sauce thickens, adding reserved pasta water if needed.
  4. Add cooked pasta to the skillet, tossing to coat evenly. Top with sliced chicken or mix it in. Garnish with chopped basil and red pepper flakes if desired. Serve immediately.

Notes

  • Use high-quality sun-dried tomatoes for richer flavor.
  • Reserve pasta water to adjust the sauce consistency.
  • Customize with your favorite herbs or cheese for a personalized touch.
  • Pair with a green salad and garlic bread for a complete meal.
