- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- ½ cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Fresh basil, chopped (for garnish)
- Optional: Red pepper flakes for a spicy kick
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 5-6 minutes per side until golden and cooked through. Let rest, then slice into strips.
- Add minced garlic to the same skillet and sauté until fragrant, about 1 minute. Add chopped sun-dried tomatoes and cook for 2 minutes. Pour in heavy cream, Parmesan, and Italian seasoning. Stir well and simmer for 3-5 minutes until sauce thickens, adding reserved pasta water if needed.
- Add cooked pasta to the skillet, tossing to coat evenly. Top with sliced chicken or mix it in. Garnish with chopped basil and red pepper flakes if desired. Serve immediately.
