- 1 lb (450g) of boneless, skinless chicken breasts or thighs
- 400g (14 oz) of your favorite pasta (penne, fettuccine, or spaghetti)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, finely chopped
- 1 cup (240ml) heavy cream or Alfredo sauce
- 1 cup (100g) grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: cherry tomatoes or spinach for added freshness
Instructions
- Start by cutting the chicken into bite-sized pieces. Season with salt, pepper, and Italian seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium heat and cook the chicken until golden brown and fully cooked through. Remove from skillet and set aside.
- Bring a large pot of salted water to a boil. Add your selected pasta and cook until al dente according to package instructions. Drain and set aside, reserving a small amount of pasta water.
- In the same skillet, add another tablespoon of olive oil. Sauté minced garlic and chopped onion until fragrant and translucent. Pour in the cream or Alfredo sauce, stirring well. Gradually stir in Parmesan cheese until melted. If sauce is too thick, add reserved pasta water to reach desired consistency.
- Return cooked chicken to the skillet with the sauce. Mix thoroughly to coat every piece. Add cooked pasta and toss to combine. Finish with additional Parmesan, chopped parsley, and optional cherry tomatoes or spinach.
