- 2 cups pancake mix
- 1 1/2 cups milk
- 3 large eggs
- 1 lb breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together pancake mix, milk, eggs, salt, pepper, and paprika until well combined.
- Spread half of the batter evenly in the prepared baking dish.
- Top with cooked sausage and half of the cheese.
- Pour remaining batter over the sausage and cheese, spreading evenly.
- Sprinkle with remaining cheese and bake for 35-40 minutes until golden and cooked through.
- Garnish with chopped parsley before serving.
Notes
- Can be prepared the night before and refrigerated; bake fresh in the morning.
- Feel free to add sautéed vegetables for extra flavor.
