  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup caramel sauce
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press into a 9-inch springform pan to form the crust. Bake for 10 minutes and cool.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour filling over crust.
  3. Bake for 55-60 minutes until set. Cool completely in pan, then refrigerate for at least 4 hours.
  4. Just before serving, sprinkle the cinnamon sugar evenly on top, drizzle with caramel sauce, and serve.
