- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine melted butter, sour cream, eggs, and vanilla. Mix well.
- Gradually add wet ingredients to dry ingredients, stirring just until combined.
- Fold in blueberries gently to distribute evenly.
- In a small bowl, beat the softened cream cheese with powdered sugar until smooth.
- Pour half the batter into the prepared loaf pan, then spread the cream cheese mixture over the batter. Top with remaining batter.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly, then drizzle with glaze made from powdered sugar and a little water or lemon juice.
Notes
- Use fresh blueberries for best flavor; frozen blueberries can be used but may bleed color.
- To make the glaze, mix powdered sugar with a teaspoon of water or lemon juice for a thinner or thicker drizzle.
