Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon.
- Gradually add dry ingredients into wet mixture, mixing until just combined.
- Drop spoonfuls of dough onto prepared baking sheets.
- For the streusel topping, combine 1/2 cup flour, 1/4 cup brown sugar, and 1/4 cup cold butter; mix until crumbly.
- Sprinkle streusel over each cookie dough portion.
- Bake for 12-15 minutes or until golden brown.
Notes
- For a richer flavor, add a splash of coffee extract to the dough.
