Instructions
- Prepare the zucchini: Wash and grate the zucchinis. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- Mix the ingredients: Combine zucchini, gluten-free flour, eggs, Parmesan (if using), garlic, onion, salt, pepper, and herbs in a large bowl. Mix until well incorporated.
- Shape the fritters: Form the mixture into small patties about 2-3 inches in diameter. Place on a plate or baking sheet.
- Cook the fritters: Heat oil in a skillet over medium heat. Fry patties for 3-4 minutes per side until golden and crispy. Drain on paper towels.
