Instructions
- Place grated potatoes in a clean towel and squeeze out excess moisture.
- In a large bowl, combine potatoes, grated onion, flour, salt, pepper, and eggs. Mix well.
- Heat vegetable oil in a large skillet over medium-high heat.
- Drop spoonfuls of potato mixture into the hot oil, flattening slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels and serve hot.

- For extra flavor, add chopped parsley or chives to the mixture.
- Serve with applesauce or sour cream for traditional accompaniment.
