For the Zesty Jalapeño Lime Ranch:
- 1 cup mayonnaise or Greek yogurt
- 1–2 jalapeños, seeds removed and chopped
- Juice of 2 limes
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon honey or agave syrup
- Salt to taste
Instructions
- Begin by marinating the chicken strips in buttermilk. In a shallow bowl, combine flour, panko, smoked paprika, garlic powder, salt, and pepper. Dredge chicken in the seasoned flour mixture, double-dipping if desired for extra crunch.
- Heat vegetable oil to 350°F (175°C). Fry chicken until golden brown and cooked through, about 4-6 minutes. Drain on paper towels.
- Grill the corn cobs over medium-high heat until charred and tender, about 10 minutes. Remove kernels and set aside. Optionally brush with butter and sprinkle with chili powder or cheese.
- Mix mayonnaise or yogurt with jalapeños, lime juice, cilantro, honey, and salt to prepare the ranch dressing. Adjust heat and tang to taste.
- Warm tortillas, then assemble by layering fried chicken, grilled corn, and drizzling with jalapeño lime ranch. Garnish with cilantro and optional cheese or lime.
