- 2 boneless, skinless chicken breasts
- 1/2 cup panko breadcrumbs
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 ciabatta rolls or hearty rolls
- 2 cups romaine lettuce, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup cherry tomatoes, halved
- 3 tbsp Caesar dressing
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix panko, olive oil, garlic powder, oregano, salt, and pepper in a bowl. Press mixture evenly onto both chicken breasts.
- Place chicken on baking sheet and bake for 20–22 minutes, or until internal temperature reaches 165°F (74°C).
- Slice ciabatta rolls in half and lightly toast in oven or toaster.
- Assemble sandwiches: spread Caesar dressing on bottom halves, layer with lettuce, tomatoes, and chicken. Sprinkle with Parmesan and top with roll halves.
Notes
- For extra crispiness, broil chicken for 2–3 minutes at the end—watch closely to avoid burning.
- Can be made ahead: Prep the chicken and store in fridge for up to 2 days before assembling.
- Vegetarian option: Substitute chicken with breaded eggplant slices or chickpeas.
