Instructions
- Start by cooking and mashing your favorite potatoes. Allow the mashed potatoes to cool slightly before mixing.
- In a large bowl, combine the cooled mashed potatoes, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper. Mix in the eggs until smooth.
- Gradually add the flour to the mixture until it holds together well enough to shape.
- Shape the mixture into small balls or disks using your hands or a cookie scoop. Roll each in Panko bread crumbs for added crunch.
- Preheat oven to 375°F (190°C). Coat a baking sheet with olive oil or cooking spray. Place the puffs on the sheet, spacing them out.
- Bake for 20-25 minutes or until golden brown and crispy on the outside.
