Ingredients

  • 2 pre-baked flatbreads (about 6-inch each)
  • 2 cups shredded cooked chicken (rotisserie or grilled)
  • 1/2 cup BBQ sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp olive oil (optional, for brushing crust)

Instructions

  1. Preheat oven to 425°F (220°C). Place flatbreads on a baking sheet.
  2. Spread 2 tbsp BBQ sauce over each flatbread. Top with shredded chicken, spreading evenly.
  3. Sprinkle cheddar and mozzarella evenly over the chicken.
  4. Bake for 10–12 minutes, until cheese is melted and bubbly, and edges are golden and crisp.
  5. Remove from oven. Top with red onion and cilantro. Brush crust lightly with olive oil if desired.
  6. Slice and serve immediately.

Notes

  • For extra crispiness, bake flatbreads 3 minutes before adding toppings.
  • Use leftover grilled chicken or rotisserie chicken for convenience.
