- 1 lb (450g) chicken breasts or thighs, cut into bite-sized pieces
- 1 cup popcorn, plain and unpopped
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- Pulse popcorn in a food processor until fine crumbs form.
- In a shallow bowl, combine popcorn crumbs, paprika, garlic powder, onion powder, salt, and pepper.
- Dredge chicken pieces in flour, dip in beaten eggs, then coat thoroughly in popcorn mixture.
- Place coated chicken on prepared baking sheet and spray lightly with cooking spray.
- Bake for 20-25 minutes, turning halfway, until golden and cooked through.

- Ensure even coating for crispy results. Adjust baking time for larger pieces. Serve with dipping sauces or salads.
