- 2 medium zucchinis, sliced into 1/4 inch rounds
- 1/2 cup grated parmesan cheese
- 1/2 cup panko bread crumbs

- 1 teaspoon garlic powder

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix parmesan cheese, panko bread crumbs, garlic powder, paprika, salt, and pepper.
- Brush zucchini slices with olive oil, then dip in the parmesan mixture, pressing gently to adhere.
- Arrange coated zucchini slices on the prepared baking sheet.
- Bake for 15-20 minutes until golden and crispy.
- Garnish with fresh parsley before serving. Enjoy hot!
Notes
- For extra flavor, add a pinch of red pepper flakes to the parmesan mixture.
- Can be made gluten-free by using almond flour instead of panko.
