- 2 cans white beans, drained and rinsed
- 4 slices bacon
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook bacon in a skillet until crispy, then crumble and set aside.
- In the same skillet, sauté onion and garlic until fragrant.
- In a pot, combine beans, cooked onion and garlic, broth, thyme, rosemary, salt, and pepper.
- Simmer for 20 minutes to develop flavors.
- Use an immersion blender to blend until smooth, or leave slightly chunky.
- Serve hot topped with crispy bacon and fresh parsley.
Notes
- Feel free to add a dash of smoked paprika for extra flavor.
- For a vegan version, omit bacon and garnish with smoked tofu or tempeh.
