Ingredients

  • 2 cans white beans, drained and rinsed
  • 4 slices bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook bacon in a skillet until crispy, then crumble and set aside.
  2. In the same skillet, sauté onion and garlic until fragrant.
  3. In a pot, combine beans, cooked onion and garlic, broth, thyme, rosemary, salt, and pepper.
  4. Simmer for 20 minutes to develop flavors.
  5. Use an immersion blender to blend until smooth, or leave slightly chunky.
  6. Serve hot topped with crispy bacon and fresh parsley.

Notes

  • Feel free to add a dash of smoked paprika for extra flavor.
