- 2–3 tablespoons honey (adjust to taste)

Instructions
- In a medium bowl, combine the ricotta cheese with honey and vanilla extract. Mix thoroughly until smooth and creamy. Taste and add more honey if desired.
- Gently fold in the chopped pistachios into the ricotta mixture until evenly distributed.
- Using a small spoon or cookie scoop, portion the mixture into small balls or shapes and place on a parchment-lined tray. Roll into smooth spheres if preferred.
- Top each with a whole pistachio or edible flower. Chill in the refrigerator for at least 30 minutes to set and allow flavors to meld.
Notes
- For added flavor, infuse the ricotta with citrus zest or cinnamon.
- You can substitute pistachios with almonds, walnuts, or hazelnuts for variety.
