- 8 oz pasta
- 2 cups sliced mushrooms
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Sauté mushrooms until tender, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in parmesan cheese until melted and sauce thickens.
- Add cooked pasta and spinach; stir until spinach wilts.
- Season with salt and pepper, then serve hot.
Notes
- Feel free to add cooked chicken or shrimp for protein.
- Use dairy-free cream and parmesan for a vegan version.
