- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste

Instructions
- Place eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes. Cool eggs in ice water.
- Peel eggs and halve them lengthwise. Remove yolks and place in a mixing bowl.
- Mash yolks with mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture into the egg whites.
- Sprinkle with paprika and chopped chives. Chill until ready to serve.
