- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside.
- In the bacon fat, sauté onion and garlic until translucent.
- Add cooked chicken and cook for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream, cook until heated through.
- Season with salt, pepper, and garnish with bacon bits and parsley.

- You can substitute turkey bacon for a leaner option.
- Ensure to no overcook gnocchi to avoid mushiness.
