Ingredients

- 2 lbs beef chuck roast, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef chunks in the slow cooker.
- Add carrots, potatoes, onion, and garlic.
- Pour beef broth and add tomato paste, thyme, bay leaf, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
- Remove bay leaf, stir, and serve hot.
Notes
- For a thicker stew, mix 2 tbsp flour with a little water and stir into the stew during the last 30 minutes of cooking.
