Ingredients

- 2 lbs beef chuck roast
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet and sear the beef roast on all sides until browned.
- Place seared beef in the slow cooker, add chopped onion, garlic, carrots, celery, thyme, salt, and pepper.
- Pour beef broth over the ingredients and cook on low for 8 hours until beef is tender.
- Remove beef, shred with forks, and return to the slow cooker.
- Add egg noodles, stir, and cook for an additional 20 minutes until noodles are tender.
Notes
- Feel free to add mushrooms or other vegetables for extra flavor.
- Use homemade or quality store-bought beef broth for best results.
