  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup chopped spinach

Instructions

  1. Preheat oven to 375°F. Mix ground meat, bread crumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs.
