- 1 1/2 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup milk
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Salt to taste
- Optional toppings: whipped cream, pecans, extra cinnamon
Instructions
- Preheat oven to 375°F (190°C).
- Mix oats, baking powder, cinnamon, nutmeg, and salt in a bowl.
- In another bowl, combine pumpkin, milk, maple syrup, vanilla.
- Combine wet and dry ingredients, mix well.
- Pour mixture into a greased baking dish.
- Bake for 25-30 minutes until golden and set.
- Serve warm, topped with whipped cream and toppings of choice.
Notes
- Can be prepared the night before and baked in the morning.
- Great with a drizzle of honey or additional cinnamon.
