- 8 large tortillas
- 6 eggs, scrambled
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cilantro
- 1 cup enchilada sauce
- 1 avocado, sliced
- 1 lime, sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix scrambled eggs with salt, pepper, and cilantro.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill tortillas with the egg mixture and some cheese, then roll them up.
- Place rolled tortillas seam-side down in the dish, then top with remaining enchilada sauce and cheese.
- Bake for 20-25 minutes until bubbly and golden.
- Serve garnished with sliced avocado, lime, and extra cilantro.

- Feel free to add cooked sausage or beans for extra protein.
- Use gluten-free tortillas if needed.
