Ingredients
Scale
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- 1 cup shredded sweetened coconut flakes
- 1 cup chopped pecans or walnuts
Instructions
- Preparing the Dough: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. In a large mixing bowl, cream the softened butter with both sugars until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the oats, chocolate chips, coconut flakes, and nuts by hand to avoid overmixing.
- Scooping and Shaping: Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press down on each cookie slightly to ensure even baking.
- Baking the Cookies: Bake for 10–12 minutes or until the edges are golden brown and the centers are set but still soft. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Storing and Serving: Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze the baked cookies or unbaked dough balls for up to 3 months.
Notes
- For a vegan option, use plant-based butter, flax eggs, and dairy-free chocolate chips.
- Gluten-free alternative: Use gluten-free flour and certified gluten-free oats.
- Storage tip: Freeze unbaked dough balls on a tray, then transfer to a freezer bag for easy baking later.
