Ingredients

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 2 cups mascarpone cheese
  • 1 1/2 cups heavy cream
  • 2 cups strong brewed espresso, cooled
  • 24 ladyfingers
  • 1/4 cup cocoa powder for dusting
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the egg yolks and sugar until pale and creamy. Gradually fold in the mascarpone cheese until smooth.
  2. Dip each ladyfinger into the cooled espresso for a couple of seconds, allowing them to absorb the coffee without becoming soggy.
  3. In another bowl, whip the heavy cream until stiff peaks form, then carefully fold it into the mascarpone mixture.
  4. Begin layering by placing a layer of soaked ladyfingers at the bottom of your serving dish, spread half of the mascarpone mixture over, and repeat with another layer and the remaining mascarpone mixture. Dust with cocoa powder before serving.
