- 1 baguette or Italian crusty bread, sliced
- 4–5 ripe tomatoes, diced
- 2–3 garlic cloves, minced
- 1 handful of fresh basil leaves, chopped
- 3 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper to taste
- Optional: balsamic glaze for drizzling
Instructions
- In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Toss gently to blend flavors. Optionally, add a splash of balsamic glaze for extra acidity.
- Preheat the oven to 400°F (200°C). Arrange bread slices on a baking sheet and bake for 5-7 minutes until golden and crisp. Alternatively, toast in a grill or toaster.
- Once toasted, rub each slice lightly with garlic. Spoon the tomato mixture generously over each slice. Garnish with extra basil leaves or a drizzle of olive oil for presentation.
Notes
- Best served immediately to enjoy the fresh and crispy texture. Prepare the tomato topping in advance and refrigerate up to 24 hours. Re-toast bread before serving to maintain crunch.
- For a vegan version, use vegan-friendly bread and olive oil. Add grated Parmesan or mozzarella for extra richness if desired.
