Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Melt the butter and dark chocolate together in a saucepan over low heat, stirring until smooth. Remove from heat and stir in brown sugar, then add vanilla extract and egg, whisking until combined.
- Gradually add the dry mixture to wet ingredients, stirring gently until just combined. Fold in chopped cherries and shredded coconut.
- Drop rounded cookie dough balls onto a parchment-lined baking sheet. Bake for 10-12 minutes until edges are firm. Cool on the baking sheet before transferring to a wire rack.
