- 1 lb sliced steak
- 4 large potatoes, peeled and diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced steak; cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add diced potatoes and beef broth; bring to a boil. Reduce heat and simmer until potatoes are tender.
- Return steak to the pot, stir in shredded cheese until melted, then add sour cream. Season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
- For extra flavor, add sautéed mushrooms or bell peppers.
- Use ground beef as a substitute for steak for a different twist.
