Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • For topping: Cream cheese, softened, powdered sugar, vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, grated carrots, honey, oil, eggs, and vanilla.
  3. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. Pour batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted comes out clean.
  6. Mix softened cream cheese, powdered sugar, and vanilla to make the topping. Spread over cooled bread before serving.
