Instructions
- Preheat oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, then vanilla extract.
- Gradually pour in apple cider, alternating with dry ingredients, and stir until just combined. Fold in chopped tart apples.
- Line baking sheets with parchment paper. Using a tablespoon or cookie scoop, drop dollops of batter onto the sheets, spacing evenly.
- Bake for 12-15 minutes or until edges are golden. Let cool on wire racks.
- Spread caramel sauce on the flat side of one cookie, then top with another to form a sandwich. Garnish with sea salt flakes or drizzle additional caramel if desired.
