  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour

  • 1 cup fresh cranberries
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. Mix softened butter, 1/2 cup sugar, flour, and salt until crumbly. Press into the bottom of the prepared dish. Bake for 20 minutes.
  3. In a bowl, whisk eggs, 1 cup sugar, lemon juice, lemon zest, and cornstarch until smooth. Stir in cranberries.
  4. Pour the lemon-curd mixture over the baked crust. Bake for an additional 25 minutes until set.
  5. Allow to cool completely, then dust with powdered sugar and slice into bars. Serve chilled or at room temperature.
