- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup fresh cranberries
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon cornstarch
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- Mix softened butter, 1/2 cup sugar, flour, and salt until crumbly. Press into the bottom of the prepared dish. Bake for 20 minutes.
- In a bowl, whisk eggs, 1 cup sugar, lemon juice, lemon zest, and cornstarch until smooth. Stir in cranberries.
- Pour the lemon-curd mixture over the baked crust. Bake for an additional 25 minutes until set.
- Allow to cool completely, then dust with powdered sugar and slice into bars. Serve chilled or at room temperature.
Notes
- For a tangier flavor, add extra lemon zest.
- Chill the bars before serving for cleaner slices.
