Instructions
- In a large bowl, combine smoked paprika, cumin, garlic powder, onion powder, chili powder, salt, and pepper. Drizzle in olive oil and mix well to create a marinade. Add the chicken pieces and toss until evenly coated. Marinate for at least 30 minutes to enhance flavor.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers or place directly on grill grates. Cook for 4-5 minutes per side, or until the chicken reaches an internal temperature of 165°F and has a charred appearance. For a smoky touch, add wood chips to the grill.
- While grilling, prepare the garlic sauce by mixing 1/2 cup Greek yogurt or mayonnaise, 2 minced garlic cloves, lemon juice, and salt. Add herbs or hot sauce if desired.
- Once cooked, transfer the chicken bites to a serving platter. Drizzle with the garlic sauce, garnish with parsley, and serve hot. Pair with sides like roasted vegetables or a fresh salad.
