Ingredients
Scale
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup milk
- 2 large eggs
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- ½ cup lemon curd
- Powdered sugar for dusting
- Vegetable oil for frying
Instructions
- Combine the dry ingredients: flour, sugar, baking powder, and salt in a large bowl.
- Whisk together milk, eggs, melted butter, and vanilla extract until smooth in a separate bowl.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the blueberries evenly.
- Use a cookie scoop to form dough into 1-1.5 inch balls and place on a parchment-lined baking sheet. Chill in the refrigerator for 15 minutes.
- Heat vegetable oil to 350°F (175°C). Fry the donut holes in batches for 3-4 minutes until golden and cooked through. Drain on paper towels.
- Cool slightly, then use a piping bag with a narrow tip to inject lemon curd into the center of each donut hole.
- Dust with powdered sugar and serve immediately. Optional: drizzle with lemon glaze for extra flavor.
Notes
- Chilling the dough helps maintain shape during frying.
- Use fresh blueberries for vibrant color; drain excess moisture if using frozen berries.
- Ensure oil is at the correct temperature for perfect golden donut holes.
- Inject lemon curd right before serving for the freshest flavor.
