- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- Whipped cream (for serving)
Instructions
- Prepare the strawberries by washing and dicing them into small pieces.
- In a large mixing bowl, combine softened cream cheese and granulated sugar, then beat until smooth. Add eggs one at a time and mix well after each addition, then stir in vanilla extract.
- Fold in the prepared strawberries gently into the cheesecake mixture.
- Press the graham cracker crust mixture into a greased baking dish, then pour the cheesecake mixture over it, spreading evenly.
- Bake in a preheated oven at 325°F (163°C) for 30-35 minutes until set. Cool completely and refrigerate for at least 2 hours before slicing and serving with whipped cream.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to a week.
- These cheesecake bars can also be frozen for up to three months.
- Use fresh strawberries for the best flavor, but thawed frozen strawberries can work in a pinch.
