Scale
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped apples (for banana apple bread) or 1 cup crushed pineapple (for pineapple banana bread)
- 1/2 cup cream cheese (for frosting)
- 1/2 cup powdered sugar (for frosting)
Instructions
- Mix the wet ingredients by creaming together butter and sugar, then adding mashed bananas, eggs, and vanilla extract.
- Gradually incorporate the dry ingredients: flour, baking powder, baking soda, and salt, into the wet mixture. Stir until combined, folding in either apples or pineapple.
- Preheat your oven to 350°F (175°C). Grease a loaf pan and pour the batter evenly into the pan. Bake for 55-60 minutes or until a toothpick comes out clean.
- Once cooled, prepare cream cheese frosting by blending cream cheese and powdered sugar until creamy, then spread over the banana bread.
Notes
- Store banana bread in an airtight container at room temperature for up to 3 days.
- For longer storage, refrigerate or wrap in plastic and freeze for up to 3 months.
- Serve banana bread warm for added delight.
- Add nuts or chocolate chips for extra flavor variation.
