- 2 lbs beef chuck, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 can diced tomatoes (14 oz)
- 2 potatoes, diced
- 2 carrots, sliced
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add beef chunks; cook until browned on all sides.
- Add chopped onions and cook until translucent. Stir in garlic, paprika, and caraway seeds; cook for 1 minute.
- Pour in diced tomatoes and beef broth; bring to a boil.
- Reduce heat and simmer uncovered for 1.5 hours, until beef is tender.
- Add potatoes and carrots; cook for another 30 minutes until vegetables are soft.
- Season with salt and pepper. Serve hot with crusty bread.
Notes
- For richer flavor, marinate beef with spices overnight.
- Adjust paprika for more or less spice.
