Ingredients
Scale
- 2 medium-sized zucchinis
- 1 cup breadcrumbs (panko or regular)
- ½ cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Spray oil for cooking
Instructions
- Wash the zucchinis and cut them into fry-shaped strips, ensuring uniform sizes for even cooking.
- In one bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper. In another bowl, beat the eggs.
- Dip each zucchini strip into the egg mixture then coat with the breadcrumb mixture.
- Preheat the air fryer to 400°F (200°C) and arrange the coated zucchini fries in the basket without overcrowding.
- Cook the zucchini fries for 10-12 minutes, flipping halfway through, until golden brown and crispy. Optionally, spray a little oil on top for extra crunch.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the air fryer to restore crispiness.
- For extra spice, add cayenne pepper to the breadcrumb mixture.
