- 1 teaspoon of ground cinnamon
- 1 cup of fresh peaches, diced
- ½ cup of vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon of vanilla extract
- Optional: chopped nuts or pecans for added crunch
Instructions
- Start by washing and dicing fresh peaches. Toss the diced peaches in a little flour to prevent sinking during baking.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, beat the eggs and add the oil or melted butter, vanilla extract, and the prepared peaches. Mix until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
- Preheat your oven to 350°F (175°C). Pour the batter into a greased loaf pan. Sprinkle chopped nuts on top if desired. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool completely before slicing. Store leftovers in an airtight container at room temperature for 2-3 days or refrigerate for up to a week. Freeze portions for later enjoyment.
