Instructions
- Start by heating the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds. Toss in the cherry tomatoes, zucchini, and red bell pepper. Sauté until the vegetables are tender and slightly caramelized, about 5-7 minutes.
- While the vegetables are cooking, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.
