Instructions

  1. Start by slicing the chicken breasts into thin strips and cleaning the mushrooms. Mince the garlic and slice the onion. Prepare the sauce mixture by combining soy sauce and oyster sauce in a small bowl.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook for about 4-5 minutes until cooked through and lightly browned. Remove and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Add garlic and onion, cooking until fragrant, about 1 minute. Then, add the sliced mushrooms and cook until they release juices and are tender, approximately 3-4 minutes.
  4. Return the cooked chicken to the pan. Pour in the soy sauce and oyster sauce mixture, stirring well. Add the cornstarch slurry to thicken the sauce. Cook for an additional 2 minutes until the sauce is glossy and coats everything evenly.
  5. Sprinkle chopped green onions over the stir-fry. For a spicy version, add red pepper flakes. Serve hot over steamed rice or noodles.
